We were aboard Team Tristram’s metallic green 821 Offshore, lines in early and the conditions spot-on. The sea was calm, the sky was clear, and everything about the morning felt right. Not long after the first drop, a reel lit up with the unmistakable surge of a kingfish.
It was a proper battle — long runs, deep dives, and stubborn power right to the end. When the fish finally came aboard and hit the ice, the crew were grinning. This wasn’t a catch to take home and forget about — it was one to enjoy right there, while the day was still unfolding.
The decision was made to head for Bumper Cove, Great Mercury Island. The 821 anchored in the bay, then backed carefully into the beach. With the stern steady, gear and crew were offloaded onto the sand, ready to settle in for a few hours. Out came the Weber Q and, alongside it, the Smokai Starter Kit.
The Smokai is different to anything else. Designed and manufactured in New Zealand, it’s the world’s original and most trusted cold smoke generator. It delivers a clean, cool, controllable wood smoke, and it’s relied on every day around the globe — by fishermen, hunters, pit masters, charcutiers, celebrity chefs, and keen home smokers alike. On this day, it was about to add another chapter to the adventure.
The kingfish fillet was laid out on the grill, the hopper loaded with wood chips, and with a flick of the switch, the smoke began to drift across the cove. The process wasn’t rushed — two hours of slow smoking gave plenty of time to relax. The crew stretched out on the sand, swam in the shallows, and swapped stories about the fight that landed the fish. Every so often the lid lifted, a wave of smoke rolled out, and the golden glow of the fillet deepened.
When the fish was finally ready, it flaked easily at the touch of a fork. Rich, smoky, and moist, it was shared straight from the board, standing barefoot on the sand with the 821 resting quietly at anchor in the bay. The flavour carried more than smoke — it carried the memory of the fight, the setting, and the reward of doing it right there at Great Mercury.
That’s what makes the Smokai unique. It doesn’t just cook food — it becomes part of the day. Built in New Zealand, trusted worldwide, and perfectly at home alongside a Tristram on the edge of the beach.
