The tanks were full, the gear was checked, and Team Tristram’s 821 Offshore was loaded before sunrise. The plan was set — steam out to our favourite reef for a cray dive. As the sun climbed our divers slipped under, fins cutting through the blue.
Down on the reef, it didn’t take long to find them. Crayfish tucked tight into cracks, antennae twitching in the shadows. With steady hands and careful moves, each one was worked free and stowed in the catch bag. After a solid dive, the crew surfaced with smiles and heavy gear — the mission had been a success.
Back on board, the catch was put straight into an ice slurry in the chilly bin. Humane handling is important, and the cold seawater and ice quickly put the crays into a sleep-like state. By the time the anchor was set in a quiet bay and the dive gear was packed away, they were ready to prepare. A quick, clean split down the centre line with a sharp knife, and the crays were ready for the grill.
